Place the pineapple chunks into the blender, add the bruised mint leaves, pineapple juice, and honey if using.
Blend on high until the mixture is smooth and frothy, about 30 seconds, with no visible chunks.
Taste the mixture and add more honey or mint if desired, then blend briefly to incorporate.
Pour the blended mixture into ice pop molds, using a funnel for neatness, and insert sticks if not attached.
Place the molds in the freezer and let freeze for at least 4 hours or overnight until completely solid.
Once frozen, run warm water over the outside of each mold for a few seconds to loosen the pops.
Gently wiggle and pull out the pops, revealing their shiny, icy surface and vibrant color.
