Ingredients

  • 10 oz frozen chopped spinach thoroughly drained and squeezed dry
  • 1 can marinated artichokes drained and chopped
  • 8 oz cream cheese softened at room temperature
  • 1/2 cup Parmesan cheese freshly grated
  • 3 cloves garlic minced or roasted
  • 1 tablespoon lemon juice freshly squeezed
  • 1 cup shredded mozzarella or Gruyère optional for extra gooeyness
  • Salt and pepper to taste

Equipment

  • Mixing bowl
  • Baking dish
  • Oven
  • Spoon or spatula

Method

  1. Preheat your oven to 180°C (350°F) and lightly grease your baking dish.
  2. Thoroughly drain the frozen spinach, then squeeze out as much moisture as possible using a clean cloth or paper towels. This helps keep the dip creamy and prevents it from becoming watery.
  3. In a large mixing bowl, combine the softened cream cheese with grated Parmesan cheese. Mix until smooth and creamy, using a spoon or spatula.
  4. Fold in the drained spinach, chopped artichokes, minced garlic, and lemon juice. Mix everything well until evenly incorporated.
  5. Season the mixture with salt and pepper to taste, adjusting as needed.
  6. Transfer the mixture into your prepared baking dish, spreading it out evenly with the back of a spoon or spatula.
  7. Sprinkle shredded mozzarella or Gruyère evenly over the top for an extra cheesy crust.
  8. Bake in the preheated oven for 20-25 minutes, until the dip is bubbling around the edges and the top is golden brown.
  9. Once baked, remove the dish from the oven and let it rest for 5 minutes. The cheese will set slightly and make scooping easier.
  10. Serve the warm dip with veggie sticks, pita chips, or toasted bread slices for dipping. Enjoy the cheesy, savory goodness!

Notes

You can prepare this dip a day ahead and bake just before serving. For a spicy kick, add a pinch of chili flakes or hot sauce to the mixture before baking.
