  • 1 ½ cups all-purpose flour sifted
  • 3 ½ teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 ¼ cups milk warm or room temperature
  • 1 large egg beaten
  • 3 tablespoons unsalted butter melted

Method
 

  1. In a large mixing bowl, whisk together the sifted flour, baking powder, salt, and sugar until well combined.
  2. In a separate bowl, whisk the egg and then stir in the warm milk and melted butter until smooth.
  3. Pour the wet ingredients into the dry ingredients and gently fold them together using a spatula, just until the batter is combined; a few lumps are okay.
  4. Preheat your griddle or non-stick skillet over medium heat until hot, and lightly grease with butter or cooking spray.
  5. Using a ladle or measuring cup, pour about ¼ cup of batter onto the hot surface, allowing space between each pancake.
  6. Cook the pancakes for 2-3 minutes until bubbles form on the surface and the edges look set; the underside should be golden brown.
  7. Flip the pancakes carefully with a spatula and cook for another 2 minutes until golden and cooked through.
  8. Transfer the cooked pancakes to a warm plate and repeat the process with the remaining batter.
  9. Serve the pancakes warm with your favorite toppings like syrup, fresh berries, or whipped cream.
